Cheese Cake The Great!

Делюсь рецептом Замечательного Великолепного Cheese Cake, коротый приготовил на одно из офисных торжеств один веселый сотрудник нашей компании. Привожу на английском, дабы сохранить уникальность рецепта. Торт не только бесподобно вкусен, но достаточно несложен и читать сам рецепт - одно удовольствие. Приятного аппетита!

White Chocolate Cheesecake as served on Juneteenth at S.G. Madison &
Associates.

FOR THE CRUST
3/4 cup ground blanched almonds
3/4 cup quick-cooking rolled oats, ground
3/4 cup graham cracker crumbs
3/4 stick (6 tablespoons) unsalted butter, melted
1/4 cup sugar

FOR THE FILLING
1 pound cream cheese, softened
1 teaspoon vanilla
1 cup granulated sugar
2 cups sour cream
9 ounces white chocolate (buy the good stuff, please)
4 large egg whites at room temperature
a pinch of cream of tartar
1 tablespoon confectioners' sugar

FOR THE CHEF
1 bottle of good wine.

LET'S GET BUSY
Make the crust: In a bowl combine well the almonds, the oats, the graham
cracker crumbs, the butter, and the sugar and press the mixture into the
bottom and 2 inches up the sides of a buttered 9-inch springform pan. Really
work this around with your fingers to develop a nice even thickness around
the entire pan. Bake the crust in a preheated 350 degree oven for 5 minutes
and let it cool in the pan on a rack.

Make the filling: In a large bowl blend together the cream cheese, the
vanilla, and the granulated sugar and stir in the sour cream. Melt the
chocolate in the top of a double boiler set over hot water and stir it into
the cream cheese mixture. Don't try to melt the choc. in a microwave! It
alters the texture and the flavor and makes for a pitiful cheesecake. In a
bowl beat the egg whites with a pinch of salt until they are frothy, add the
cream of tartar, and beat the whites until they hold soft peaks. Beat in the
confectioners' sugar and beat the whites until they hold stiff peaks. Stir
one-third of the whites into the chocolate mixture and fold in the remaining
whites gently but thoroughly.

Open the bottle of wine at this point and begin drinking for the next 45
minutes to 4 hours. If you have friends over and more than one bottle of
wine, increase the time by an additional 3 hours.

Spoon the filling into the crust and bake the cheesecake in a preheated 325
degree oven for 45 minutes. (The cheesecake will not be set.) Turn off the
heat, prop the oven door open 1 inch, and let the cheesecake stand in the
oven for 1 hour and 30 minutes to 2 hours, or until it is cool. If you don't
do this you're going to wind up with large and very ugly cracks in the
cheesecake. Chill the cheesecake for at least 12 hours. I usually shave some
dark or white chocolate onto the top just before serving, or decorate with
chocolate straws or something else equally enjoyable.

This is a fat-free, cholesterol-free, and low calorie dessert that everyone
will enjoy. And remember, you've been drinking.

Pro fat-free - konechno shutka! Eto takoi u nas etot tovarisch. Tort konechno silno vrednyi, no horosh... net slov!

Как всегда. Все что вкусное - запретно. Мороженое, пироженое, торт, шоколадка. А как хочется.... :|
