Assuming you are referring to white/pale yellow bulbs of Belgian endive, not curly green endive (both can be cooked, actually, but in a different way):
1. Split in half, grill on a barbecue grill and toss with olive oil, salt and pepper.
2. Melt 2 tablespoons of butter in a frying pan. Cut the endives in half (unless they are small, in which case do not cut them). Arrange endives in one layer, add salt, toss the endives to coat them with butter, sprinkle with 2 tablespoons chopped rosemary leaves, cover the pan with the lid, and cook until the endives are golden on one side for about 20 minutes. Turn the endives and continue cooking until they are golden and tender. Remove the lid, sprinkle the endive with 2 teaspoons of sugar (you can skip the sugar), toss the endives and continue cooking until all the liquid has evaporated.
3. Split endives in half, toss with olive oil, salt and pepper. Arrange in one layer in a baking dish, cover with foil and bake for 30 minutes at 350 oven until tender. Sprinkle with chopped walnuts and grated parmesan and bake, uncovered, for 10 minutes.
There are other recipes - but I like the simple ones best since I prefer the strong flavour of endives to all embellishments.

Have to agree with you here - I am a strong advocate of enjoying a product's natural flavour in most dishes!
